Thank you very much for the comment you made on my post about beans and rice. I am in survival mode with burnout, and eating has been tough. I am currently cooking rice in chicken stock and adding red beans and some herbs and spices that I have, inspired by the recipe you linked. 💕
I’m not sure if the skin of the beans will get tough from the stock (as I hear that about cooking them in salt) but the writers of the recipes have probably sorted that out.
Another easy way to eat is crackers and pre cut vegetables with cheese or a protein dip. I’m not able to eat this now but I found a copycat recipe for a Tofutti cream cheese I used to love. Tofu is very cheap and quickly blended.
If you have the money seriously consider buying some Ensure or protein bars for snacks. Multivitamin tablets. Fortified nutritional yeast or Marmite spread on buttered toast for the B12. (Consider margarine fortified with vitamins A and D.) Individual tubs of yogurt are easy.
Scoop sandwich tuna onto crackers or eat it from the can. Keep tins of chunky soup on hand to heat in the microwave and have fixings for sandwiches. It’s very easy to swipe on some mustard pickles and add a slice of cheese if you tolerate these ingredients.
Another idea is shredded bbq chook and premade coleslaw inside bread rolls.
I’m being so serious right now. If you become malnourished you will enter a downward spiral where you have no energy to take care of yourself or feed yourself.
